Based on rustic Italian regional recipes this is an all meat sausage made with prime, lean, fresh Irish pork mixed with coarsely ground toasted fennel seeds, some chilli flakes, mace, nutmeg, coriander and white and black pepper.
These coarsely ground sausages are filled into chubby natural sheep’s casings and are packed without any preserving gasses.
Succulent, meaty and slightly spicy these sausages can be used in any recipe that calls for Italian sausages.
