We are delighted to be able to say that all our products are nitrate free. This is something we have done from the start and are able to do because we only use fresh top quality pork and so only need a mild preservative.
It is also important to us that all our sausages are wheat free. We do not use any rusk as we believe it has no other function other than to hold water. Instead we use oats from E & J Flahavan in Kilmacthomas, Co. Waterford.
For our gluten free sausages we do not use any cereal at all and make them completely separately to prevent any cross contamination.
