Roast Garlic & Red Wine
Based on traditional French regional recipes this is an all meat sausage made with prime, lean, fresh Irish pork mixed with roast garlic cloves, red wine, nutmeg, coriander and black and white pepper.
These coarsely ground sausages are filled into a chubby natural sheep’s casing and are packed without any preserving gasses.

Toasted Fennel & Chilli Flakes
Based on rustic Italian regional recipes this is an all meat sausage made with prime, lean, fresh Irish pork mixed with coarsely ground toasted fennel seeds, some chilli flakes, mace, nutmeg, coriander and white and black pepper.
These coarsely ground sausages are filled into chubby natural sheep’s casings and are packed without any preserving gasses.
Succulent, meaty and slightly spicy these sausages can be used in any recipe that calls for Italian sausages.
Pork & Leek
This is our classic family Dinner sausage, it has a good traditional Irish flavour and texture and the classic combination of pork with leek.
We make these with 85% fresh Irish pork with the added goodness of oats, flavoured with leek, nutmeg and mace and filled in to natural casings. Their texture is firm and meaty and more Irish in style than our other Dinner sausages.
These are a really versatile sausage and will be popular with all the family for brunch or bangers and mash or a top notch sausage sandwich.
