Karen Liston’s Sausage & Leek Pie (Serves 8)
To serve from a large dish for lunch or dinner.
Pastry: regular quiche pastry
4 leeks sliced and washed,
2oz plain flour,
4tsp grainy mustard,
2 handfuls chopped parsley
Preheat oven to 200°C.
In a little olive oil fry the sausages until brown, and remove from pan.Fry leeks for 2-3 mins. Sprinkle in flour and cook stiring for 2 mins.
Take off heat and stir in milk, season add mustard and bring to the boil, stirring.
Cut sausages at an angle into large chunks.
Put into a baking dish & cover with leek sauce. Cover with rolled pastry. Bake for 25 minutes.
